This gluten-free lasagna recipe is perfect for those who want to reduce their meat consumption, as part of the meat is replaced by tofu.
Ingredients
- 2-3 tbsp. olive oil
- 100-125 g ground beef
- 1/4 cup chopped onion
- 1 clove garlic, minced
- 1 cup (250 ml) crushed tomatoes
- 75-100 g tofu
- Basil and oregano
- Salt and pepper
- No-boil gluten-free lasagna noodles
- Mozzarella cheese
Preparation
- In a saucepan, add 1-2 tbsp. of olive oil and cook ground beef with onion and garlic.
- Add the crushed tomatoes, basil, oregano, salt and pepper.
- Simmer for approx. 25 minutes.
- Assemble the lasagna as follows:
- Put 1-2 tbsp. of olive oil and a thin layer of sauce on the bottom of a 6″ x 8″ lasagna baking dish.
- Place 2 lasagna noodles on top
- Spread the sauce to cover the noodles
- Place 2 more lasagna noodles on top
- Spread a thin layer of sauce and crumble tofu on top
- Place 2 more lasagna noodles and then the remaining sauce
- Spread a layer of shredded mozzarella cheese over the sauce
- Bake at 350 0C for 25-30 minutes.
This recipe makes 2 servings of lasagna.
