Beef and tofu lasagna

This gluten-free lasagna recipe is perfect for those who want to reduce their meat consumption, as part of the meat is replaced by tofu.

Ingredients

  • 2-3 tbsp. olive oil
  • 100-125 g ground beef
  • 1/4 cup chopped onion
  • 1 clove garlic, minced
  • 1 cup (250 ml) crushed tomatoes
  • 75-100 g tofu
  • Basil and oregano
  • Salt and pepper
  • No-boil gluten-free lasagna noodles
  • Mozzarella cheese

Preparation

  1. In a saucepan, add 1-2 tbsp. of olive oil and cook ground beef with onion and garlic.
  2. Add the crushed tomatoes, basil, oregano, salt and pepper.
  3. Simmer for approx. 25 minutes.
  4. Assemble the lasagna as follows:
    • Put 1-2 tbsp. of olive oil and a thin layer of sauce on the bottom of a 6″ x 8″ lasagna baking dish.
    • Place 2 lasagna noodles on top
    • Spread the sauce to cover the noodles
    • Place 2 more lasagna noodles on top
    • Spread a thin layer of sauce and crumble tofu on top
    • Place 2 more lasagna noodles and then the remaining sauce
    • Spread a layer of shredded mozzarella cheese over the sauce
  5. Bake at 350 0C for 25-30 minutes.

This recipe makes 2 servings of lasagna.
