Homemade Salsa

Too many tomatoes in your garden! No problem! This easy-to-make recipe is sure to please. This homemade salsa goes well with tacos or chips.

Ingredients

  • 5 cups chopped tomatoes
  • 2 medium onions
  • 3 Cayenne peppers (or 2 Cayenne pepper with 1 Jalapeno pepper)
  • 2 cloves garlic
  • 1/4 cup rice vinegar
  • Oregano
  • Salt and pepper

Directions

  1. Draw an X under the tomato and plunge into boiling water for 1-2 minutes. Remove and cool in a pan of cold water. Remove skin.

2. Chop all ingredients and add to chopped tomatoes in a large saucepan.

3. Bring to the boil, then simmer for about 1h 30 until thickened. Pour into conditioned hot Mason jars. This recipe makes 3 jars of 500 ml.
